Latkes (a.k.a. Potato Pancakes)

*I got this recipe from Epicurious, but I have altered it a bit. 

Latkes, or potato pancakes, are a typical dish served during Hanukkah. They are delicious and are usually served with applesauce. I personally like to eat them as is or with ketchup.

 

What you will need:

6fea69_a7a292b6db374cd48e3f4b69f66bd48e1 lb. potatoes (Russets work the best; I was told that mashed potatoes work as well)

 

1/2 c. finely chopped onion

 

2 large eggs, lightly beaten

 

1/2 tsp. salt

 

1/2 to 3/4 c. olive oil (You can use vegetable or coconut oil as well; I added more as I went)

 

Optional: applesauce

How to make:

 

  1. Preheat oven to 250*F.

  2. Peel potatoes. 

  3. Coarsely grate potatoes. Chop onions.

  4. Transfer grated potatoes to large bowl of cold water.

  5. Soak potatoes for 1 to 2 minutes (I did 2) after the last batch is added.

  6. Drain.

  7. Spread potatoes and onion on towel and roll-up like a jellyroll.

  8. Wring out to remove as much liquid as possible.

  9.  Transfer potato mixture to bowl and add eggs and salt.

  10. Heat your choice of oil in 12-inch nonstick skillet. Stovetop should be set at moderately high.

  11. Cook in batches of 3; spoon small lump of mixture into pan.

  12. Spread mixture into small rounds with fork. 

  13. Reduce heat to moderate and cook pancakes until golden brown on both sides.

  14. Transfer to paper towels to drain and season with salt. (I seasoned the first batch only.)

  15. To keep warm, place pancakes in oven on wire rack placed in a shallow baking pan.

  16. Enjoy!

P.S. If you want to make the process faster, you can skip ahead to step 9 (don’t forget to chop the onion though) if you decide to use mashed potatoes.
